Ingredients:

  • 2 teaspoons sesame oil
  • 2 garlic cloves, finely chopped
  • 2 cm ginger, peeled, grated
  • 2 teaspoons soy sauce
  • 2 chicken breast fillets, skin removed, sliced
  • 2 cups snow peas
  • 2 red capsicums
  • 100g cashews, lightly toasted
  • 4 green onions, sliced
  • ¼ cup coriander
  • 2 tablespoons fresh basil

  Method:

  1. Heat sesame oil in a large fry pan over medium heat.
  2. Cook chicken until lightly brown. Add garlic, ginger and soy sauce. Cook for 1 minute.
  3. Add snow peas, capsicums, cashews and green onions and cook for a further 2 minutes or until softened.
  4. Stir through herbs and serve.
