Ingredients:

  • 2 tablespoons smoked paprika
  • 2 tablespoons cumin
  • 1 tablespoon brown sugar
  • ¼ tsp cayenne pepper
  • 2 cups Beef stock
  • 3 garlic cloves, peeled
  • 2 bay leaves crushed
  • 12 eschallots, peeled
  • ½ bunch thyme
  • 1.2 kg beef brisket

  Method:

  1. Pre-heat oven to 150°C.
  2. Combine dried spices and brown sugar and rub into brisket.
  3. Place brisket in a large baking tray with beef stock, garlic, bay leaves, eschallots and thyme. Cover with foil. Cook for 4 hours or until tender.
  4. Serve with smoky BBQ sauce, coleslaw and pickles serve.
